Chop the onion into thin strips and sauté it in the olive oil, stirring occasionally until golden brown
Reserve half of the onion
Place the remaining onion with the olive oil in a pan and add the lentils with seven cups of water
Cook over low heat and season with salt
Cook until the lentils start to soften
Drain and reserve the cooking liquid and lentils separately
Mix the raw rice with cooked lentils, add the remaining cup of hot water and two cups of lentil cooking liquid
Season with salt and cook over low heat until the rice and lentils are tender
Serve with reserved fried onion.
