'1/4 cup of green olives'
'1/3 cup (50g) of pitted black olives'
'2 cloves of garlic, minced'
'1/2 cup of olive oil'
'4 anchovy fillets'
'1/2 kg of fresh tomato, seeded and chopped'
'1 red bell pepper, diced'
'1 tablespoon of chopped fresh parsley'
'salt and black pepper to taste'

Chop the green olives and set aside
Mash the garlic cloves in a pan with olive oil
Add the anchovy fillets and mash with a wooden spoon
Add the chopped green olives and pitted black olives
Mix well
Add the chopped tomato
Add the diced red bell pepper and chopped parsley
Taste and adjust seasoning as needed
Cook over medium heat for about 15 minutes
Serves 500g of pasta.
