In a blender, place the egg (egg yolks will give you a thicker mayo, while whole eggs will result in a slightly thinner consistency)
Add mustard, salt, paprika, vinegar, and 1/2 cup of chicken, olive oil or sunflower oil
Bend the mixture for 5 seconds until it becomes creamy
Without stopping, add the remaining chicken, olive oil or sunflower oil in a fine stream
Blend until the mixture has thickened and is creamy
Serve on sliced pumpernickel bread and garnish with green or red pepper
