1/2 cup of black olive, crushed (100g)
Salt and black pepper to taste

Heat the olive oil in a large skillet over low heat
Add the onion and cook, stirring occasionally, for 20 minutes, or until dark brown
Transfer to a processor and add the dried tomato and black olive
Process quickly to achieve a coarse paste
Don't over-process, lest you form a puree
If necessary, season with salt and pepper and let cool
Serve with crackers
