Mash the garlic well to obtain a paste
Stir constantly in the same direction, gradually add the olive oil
When the mixture has the consistency of mayonnaise, add the lemon juice or vinegar
Stir again, then slowly add the remaining olive oil
Season to taste
This sauce is used with fish, meat, or salads
Yield: 1 cup of sauce.
