1 cup heavy cream

1/4 cup granulated sugar
1 tablespoon boiling water
2 tablespoons strong brewed coffee
3 tablespoons brandy

Warm the heavy cream, but do not let it boil
Beat the egg yolks with the sugar until smooth
Add to the warmed heavy cream, stirring constantly
Place over low heat, stirring ceaselessly, until thickened, without boiling
Remove from heat and pour into a bowl
Dissolve the strong brewed coffee in the boiling water, and add to the mixture
Add the brandy and cover with plastic wrap
Allow to cool to room temperature
This sauce can be served over ice cream or cakes
Yields approximately 1 1/3 cups.
