Wash the mushrooms well and soak them in hot water for 15 minutes
Drain and reserve
Fry the onion in butter until golden brown
Add the reserved mushrooms and simmer, stirring occasionally
Add the all-purpose flour and cook for one minute, stirring constantly
Add the chicken broth gradually, stirring constantly to dissolve the flour mixture
Add the heavy cream and cook until boiling point, stirring constantly
Remove from heat and check seasoning
Ready to serve with 500g of macaroni.
