In a blender, combine butter, flour, heavy cream, seasonings, and egg yolks
Mix with a spoon, cover, and blend for 4 seconds or until everything is well mixed
Pour into a saucepan
Simmer over low heat until the sauce thickens and becomes smooth
Add the sherry wine and serve with cooked or baked fish
Yield: 1 1/2 cups
