3 egg yolks

1 tablespoon of chopped parsley
1/2 cup of butter or margarine
1 medium tomato, peeled and seeded, diced

Beat the eggs with the vinegar, ginger, and parsley
Place over simmering water but not boiling
Add the butter or margarine in 3 batches, beating constantly until melted
Continue beating until slightly thickened
Remove from heat and add the tomato
Use as needed.
