1/4 cup of lemon juice
4 tablespoons of butter or margarine
A pinch of salt

Mix the cornstarch and lemon zest in a double boiler
Add the water gradually; cook, stirring constantly, until thickened
Cook over low heat for 10 minutes, stirring occasionally
Remove from heat; add sweetener, lemon juice, butter or margarine, and salt
Stir until the butter has melted
Chill for six portions.
