One-third cup of sugar
2 1/2 tablespoons all-purpose flour
Three-fourths cup whole milk
2 egg yolks
One-quarter cup orange juice
1 tablespoon grated orange zest
1 tablespoon lemon juice
1 tablespoon unsalted butter

Combine the sugar and flour in a saucepan
Add the milk gradually, stirring well
Bring to a simmer and cook for 5 minutes, stirring constantly, until thickened
Beat the egg yolks well
Add a little of the milk mixture and then pour everything into the saucepan with the milk
Cook for an additional 5 minutes, stirring, without letting it boil
Remove from heat
Combine the orange juice, grated zest, lemon juice, and butter
Stir well and let cool
Can be used with simple or chocolate croissants.
