For the dough:
1 cup water
(1/2) cup unsalted butter or margarine
1 cup all-purpose flour
(1/2) teaspoon salt
4 eggs
sorbets of your preference
Molten chocolate:
90g bittersweet chocolate bars
(1/2) cup milk
a pinch of salt
1 1/2 cups confectioners' sugar
3 tablespoons Karo syrup
2 tablespoons unsalted butter or margarine
1 teaspoon vanilla extract

2 tablespoons unsalted butter or margarine
1 teaspoon vanilla extract
Combine water and butter or margarine in a saucepan and bring to a boil
Let it simmer
Add the flour, salt, and eggs one at a time, beating vigorously after each addition
Remove from heat and let cool
Shape into puffs or small balls and place on a baking sheet
Bake in a preheated oven (200°F) for 40 minutes or until golden brown
Let cool completely
Fill with sorbet of your preference and refrigerate
Just before serving, remove from refrigerator and top with melted chocolate sauce prepared as follows: melt the chocolate and milk together in a saucepan, stirring constantly
Remove from heat and whisk well to smooth out any lumps
Add salt, confectioners' sugar, and Karo syrup
Stir well
Heat again for 2-3 minutes, stirring occasionally
Remove from heat and add butter or margarine, vanilla extract, and mix well
Puffs can be filled with sweet and savory ingredients alike
For sweet fillings, use whipped cream, gelato, or chocolate mousse as the filling material.
