Prepare the basic mayonnaise: in a bowl, combine the egg yolks and whisk with a fork or electric mixer (chicote) until smooth
If desired, use a stand mixer at low speed to whip the mixture
Add the vegetable oil, slowly pouring it into the bowl while continuously whisking, until the mixture thickens
Add the orange juice, salt, and black pepper, and continue whisking until the mayonnaise reaches the desired consistency
Cover and reserve
Peel the orange zest for 2 minutes
Drain and finely chop
Add the orange juice to the mayonnaise, and mix well
