Quick Tomato Sauce
2 tablespoons of olive oil
1/2 cup finely chopped onion
2 cloves garlic, minced
1/2 pound tomatoes
1 cup beef broth
salt

Quick Tomato Sauce

Sauté the onion and garlic in hot oil
Dunk the tomatoes in boiling water
Remove their skins and seeds
Puree the pulp in a blender or food processor, then combine with the sautéed mixture
Add the beef broth gradually, allowing the sauce to thicken and darken slightly
Alternatively, you can use a cube of concentrated beef stock and 1 cup of water instead of beef broth
You may also choose to add your own desired spices, such as bay leaf, sage, mint, or oregano.
