1 cup of sugar
1/2 cup of glucose
1/8 teaspoon of salt
3/4 cup of water
1 cup of white passion fruit seeds, crushed
1 1/2 teaspoons of grated lemon zest
2 tablespoons of lemon juice
1/2 cup of toasted almonds, peeled and ground (or walnuts)
1 cup of sugar

Combine the sugar, glucose, salt, and water in a saucepan and stir over medium heat until boiling
Add the passion fruit seeds, lemon zest, and lemon juice
Cook for an additional 6 minutes, stirring occasionally
Add the almonds
Stir well to combine, serve warm or chilled, over vanilla or strawberry ice cream.
