1 disk of sponge cake
6 red grapefruits
1 can of condensed milk

1 envelope of unflavored gelatin
5 tablespoons of water

Line the tart pan with the sponge cake and set aside
Remove the skins and seeds from four grapefruits, cut into pieces, and blend in a blender with condensed milk, whipped cream, and hydrated gelatin dissolved in hot water
Place over the reserved tart base and let it chill for four hours
Topping
Melt the white chocolate in a double boiler and mix with whipped cream
Peel, slice into rounds the remaining grapefruits, and place on top of the tart.
