1/2 cup cold butter, cut into 4 pieces

black pepper to taste

Cut the butter into 4 equal pieces
Beat the egg yolks
Combine the lemon juice and 1 piece of butter and place in a warm water bath, making sure not to let it touch the top of the pan
Beat the mixture until the butter is fully incorporated into the egg yolks and the mixture has thickened slightly
Continue with the remaining pieces of butter, beating after adding each one
Add black pepper to taste
Keep warm over simmering water but do not let it boil directly
Use about 1 cup
Serve warm.
