Place the blade of a knife in the processor
Add the egg yolks, lemon juice, salt, and black pepper
Blend well
Don't stop the processor, gradually add the melted butter, using the remaining white portion that was left in the pan
This is the basic sauce
If you're going to add whites, the sauce can rest at room temperature for a few hours
When serving, heat it slightly in a water bath
Beat the whites until stiff with a pinch of salt
Add to the sauce, stirring carefully
Serve immediately
Serves 1 cup or 16 tablespoons.
