5 tablespoons of annatto seeds
2 tablespoons of olive oil
2 pounds of fish fillets (robalo, dourado, vermelho, cavala)
4 sprigs of cilantro
3 tomato wedges
2 cloves of garlic
2 green onions, chopped
1 onion, chopped
Lime juice to taste

Mash the garlic with salt, add lime juice and season the fillets

In a large skillet, arrange a layer of fish and top it with part of the tomato, onion, green onions, and cilantro
Drizzle with olive oil and annatto seeds
Alternate layers until all the fish is used
Cover and let cook over low heat without stirring
Shake the skillet occasionally and cook until the fish is tender
Serve with rice and beans.
