8 fillets of grouper (1.5 kg)
1 tablespoon of salt
2 tablespoons of lime juice
2 tablespoons of olive oil
4 cloves of garlic, minced
4 medium tomatoes (400 g), cut into wedges
5 medium onions (500 g), cut into rings
4 tablespoons of chopped cilantro
2 tablespoons of green onion, chopped
1/4 cup of warm olive oil (60 ml) with 1 tablespoon of coloring agent
1/2 cup of water (120 ml)

In a medium bowl, season the grouper with salt and lime juice
Set aside
In a large skillet, heat the olive oil over high heat
Add the garlic and cook until soft (3 minutes)
Add half of the tomato and onion and cook, stirring constantly, until tender (3 minutes)
Add the fish, remaining tomato, and remaining ingredients
Simmer for about 15 minutes or until the fish flakes easily with a fork
Transfer to a serving dish and serve immediately
