Hydrate the gelatin in cold water and reserve
Mix the coffee with warm water and add the gelatin
Let it sit until homogeneous, without overheating
Remove from heat and add the milk, skimmed milk, and dietetic sweetener
Let it chill in the refrigerator until starting to set
Remove from refrigerator and let it come to room temperature
Whisk egg whites until stiff and fold them gently into the reserved cream
Distribute into individual cups and refrigerate again until firm
Serve decorated with coffee grounds.
