In a medium saucepan, bring the chicken broth, onion, carrot, tomato, lime wedges, and parsley to a boil over high heat
Reduce the heat and simmer for 15 minutes
While that's cooking, clean and de-shell the crab
Add the crab to the boiling broth and cook for 4 minutes or until firm
Remove the lime and turn off the heat
Dissolve the gelatin in 1/2 cup of cold water and add it to the hot broth
Slowly beat the broth with the vegetables and crab in a blender
Check the seasoning and add salt, black pepper, and lime juice if needed
Pour into a large bowl and refrigerate for a few minutes
If desired, place the bowl over ice to thicken it slightly
Beat the heavy cream or condensed cream until stiff peaks form
If using canned cream, discard the liquid and use the cream without beating
Add it to the crab mixture along with the mayonnaise
Pour into a decorative mold lightly greased with oil
Refrigerate for 4 hours or until firm
Unmold and garnish with cooked crab claws and lime wedges
