Place the chocolate and almonds in a double boiler and heat until the chocolate melts
Beat the egg whites until they become fluffy, adding salt as needed
Beat the yolks until they thicken
Add the chocolate-almond mixture to the yolks and mix well
Join the whipped egg whites and mix very well
Place in a serving dish that can go directly to the table and refrigerate for at least 4 hours
Before serving, cover with tempered whipped cream infused with a hint of almond extract
Sprinkle with shaved chocolate
Serve in 12 pieces.
