250g of bittersweet chocolate
2 tablespoons of brandy
2 tablespoons of cold water

Separate the egg yolks from the whites
Break the chocolate into small pieces and place it in a saucepan with the water
Stir over low heat until the chocolate melts
Remove from heat and carefully whisk in the egg yolks and brandy
Add the beaten egg whites and mix very well
Fill small cups and refrigerate for at least 4 hours
Remove and serve
Serves 6 to 8 portions.
