Beat the 12 large egg yolks well and mix with 250g of melted bittersweet chocolate and a pinch of sugar
Fold in the 12 whipped egg whites gently using a spatula, until stiff peaks form
Finish with shredded dark chocolate (use a vegetable peeler to make the shreds) and let the mousse chill overnight in the refrigerator before serving.
