Cut the pineapple (without the core) into chunks
Pour it into a sieve to drain
Reserve 1 cup of syrup and pour it over well-chopped gelatin leaves
Leave it to soak for 1 hour
Beat the egg yolks with 12 tablespoons (of soup) of sugar, then gradually add in 3 cups of warm milk while beating rapidly
Heat it on low heat, stirring constantly until thickened
Remove from heat before boiling
Whisk together the condensed milk, red wine, shredded coconut, biscuit crumbs, and crystallized fruits
Allow the mixture to cool
Melt the gelatin in a water bath
Remove from heat and let cool
Beat the egg whites until fluffy, then add the remaining sugar and beat until stiff peaks form
Combine well with the cooled mixture of fruit, gelatin, pineapple chunks, crystallized fruits, heavy cream, and whipped cream
Pour into a prepared mold and chill in the refrigerator for at least 12 hours before serving.
