1 tablespoon of unflavored gelatin
1/4 cup of cold water
2 tablespoons of fat
2 tablespoons of wheat flour
salt and pepper to taste
2 cups of milk
1/2 cup of cooked chicken or roasted turkey, finely chopped
1/2 cup of prosciutto, finely chopped
1 hard-boiled egg, finely chopped
1/2 cup of finely chopped parsley
1/2 cup of mayonnaise

Soak the gelatin in cold water
Melt the fat, add the flour, salt, and pepper; then add the milk and cook until it thickens, stirring constantly
Dissolve the gelatin in the hot sauce
Add the chicken, prosciutto, parsley, and mayonnaise
Mix well
Pour into a ring mold and refrigerate until firm
Unmold and garnish with tomato
Serve 8 portions
