Mash the guavas with lime juice, water, and sugar in a blender and then strain through a sieve
Dissolve the gelatin in a small amount of water over low heat, stirring constantly until dissolved
Add to the guava mixture and stir well
Place in the refrigerator or put the bowl in an ice bath with cold water, stirring occasionally until slightly thickened
Beat the heavy cream until stiff peaks form
Add a little of the guava mixture, mix carefully, and join with the remaining guava
Place in a large bowl, or individual bowls, cover, and refrigerate until firm
Serve 12 portions.
