1 cup grated coconut

3 cups sugar

Shred the coconut, removing any dark brown skin and rind
Mix all the ingredients together
Butter a 9-inch round cake pan or individual mini molds with unsalted butter
Dust with sugar
Pour the mixture into the prepared pan and bake in a water bath at the lowest rack of the oven until a toothpick inserted in the center comes out clean
Let it cool slightly before unmolding.
