640 g of bitter-sweet chocolate, chopped

Bring 2 inches of water to a boil in a saucepan
Place a heatproof bowl over the saucepan and let it warm in a water bath
Cover and let it simmer until the water bath is hot and the bowl feels warm
Remove from heat and add chopped chocolate to the bowl
Re-cover and let it sit for about 5 minutes
Remove cover and check if the surface of the chocolate has softened
Remove the bowl from the saucepan and whisk with a spatula until smooth
Transfer to a large bowl, add heavy cream while whipping, and brandy
Whip until stiff peaks form
Transfer to a serving dish, dust with powdered chocolate sifted through a sieve
Serve with waffle cookies if desired
