In a bowl, dissolve the gelatin in boiling water
Add the orange juice and zest
Place on a larger bowl with ice and mix until it slightly thickens
Add the egg white and whip in a mixer until it becomes light and fluffy, doubling in volume
Shape into individual portions, lightly mounded
Refrigerate for about 3 hours to set firm
Serve in 8 pieces.
