Mash the sweet potatoes in a ricer

Shape into small balls about 2 cm in diameter
Place these balls in a large pot of boiling salted water
Cook for 10 seconds after they rise to the surface
Remove with a slotted spoon and place in a serving dish

Melt the butter in a large skillet over medium heat
Add the heavy cream and grated Gorgonzola cheese
Cook the mixture, stirring until it's smooth and creamy
