Prepare the filling: In a 4-cup capacity microwave-safe bowl, mix together the olive oil with the onion and garlic
Cook in the microwave on high for 5 minutes, stirring halfway through
Add the remaining ingredients, mix well, and cook on high for an additional 8 minutes, stirring halfway through. Reserve
Prepare the batter: In a medium-sized bowl, combine all ingredients and mix well with a hand mixer
In a 16cm diameter microwave-safe plate, spread 2 tablespoons of the batter and cook in the microwave on high for 1 minute
Transfer to a serving tray
Fill with 2 tablespoons of the reserved filling and roll up
Place in another serving tray. Reserve
Repeat the process with the remaining batter and filling, arranging the pancakes side by side in the serving tray
Serve immediately
