Cut the mozzarella into fine slices and combine it with butter or margarine and heavy cream in a saucepan, over very low heat
Using a wooden spoon, mix until you get a smooth cream
Add the egg whites one by one, mixing well to incorporate them fully with the mozzarella
After that, pour the whole eggs on top
Sprinkle with plenty of salt and pepper, and serve with toasted bread slices from which the crust was removed beforehand.
