In a large bowl, beat the calf liver with the egg
Add the cheese and prosciutto
Gradually add the flour and mix with a wooden spoon until a dough forms that can be shaped into small oval cakes
Add the nutmeg and salt
Beat for 1 minute
Using two coffee spoons or 1/2 cup, shape the cakes and let them fall into a large pot of boiling water tempered with salt
When the cakes rise to the surface, remove them with a skimmer
Drain on paper towels
Place in a refrigerator-lined mold
When serving, warm for 15 minutes in a moderate oven (180°C)
Serve with tomato sauce or grated Parmesan cheese
