6 peeled tomatoes, without seeds
1/2 red bell pepper, diced
2 teaspoons of ground cumin
3/4 cup of chopped green olives
a pack of creamed onion
800ml of milk
2 cups of cooked rice
1 kg of cooked and mashed sweet potato
100g of shredded mozzarella

In a pan, melt the butter and olive oil, then brown the chicken cubes

Add the onion, tomato, bell pepper, cumin, and olives to the pan and cook for five minutes

Add the creamed onion mixture dissolved in milk to the pan

Simmer everything over low heat for another five minutes or until thickened

Pour the chicken casserole into a greased dish and top with cooked rice and mashed sweet potato

Cover the dish with shredded mozzarella cheese and bake in a preheated oven at 200°C for about 20 minutes, or until golden brown.
