Dough
1 and 1/2 kg cooked potatoes
1 and 1/2 spoonfuls of butter
1/2 cup grated cheese
1/2 cup all-purpose flour sifted
3 spoons of baking powder
3 eggs
Salt, oil, and black pepper to taste
Sauce
3 spoons of oil
2 zucchinis cut into thin strips or grated
1 clove of garlic
1 carrot cut into thin strips or grated
Salt, black pepper, and grated cheese to taste

Mash the warm potatoes through a ricer
Combine with butter and let cool
Add cheese, flour, baking powder, and eggs
Season with salt and black pepper
Divide the dough into several portions and shape each one into a roll on a floured surface
Cut uniform pieces of 2.5 cm with a knife
Place the dumplings on a floured surface to prevent sticking
Cook the dumplings slowly in boiling water with salt
Remove them with a skimmer when they rise to the surface
Put them in a warm plate and drizzle with oil
Make the sauce: sauté garlic well in oil
Remove the garlic and, in the same oil, add zucchini and carrot, cook for 2 minutes and remove from heat
Season with salt and black pepper and mix with dumplings
Sprinkle with grated cheese and serve.
