Boil the sweet potatoes with salt and water until tender
Mash them in a potato ricer
Place the mash on a smooth surface and let it cool

Mix the eggs, pepper, and flour to obtain a binding consistency

Roll out the mixture into thin strips about 2 inches wide
Cut them into bite-sized pieces and dust with flour
Crumble them slightly and set aside

In a large pot, bring plenty of water to a boil
Add salt and cook the fritters in batches, until they float to the surface

Transfer them to a greased bowl with some butter
