In a bowl, mix together the ham, eggs, and olives on a surface dusted with wheat flour
Roll out the puff pastry very thinly and cut into circles of about 10 cm in diameter
Place 1 tablespoon of filling in one half of the circle, brush the edges with water, fold the other half over to form a triangle, and press the edges together with a fork to seal
Brush with egg and bake in a moderate oven (180°C) for about 30 minutes or until golden brown
Make approximately 40 turnovers
