Sift the ricotta through a fine-mesh sieve
Place it in a bowl and combine with flour and Parmesan cheese, mixing well to form a homogeneous dough
Knead the dough on a floured surface until smooth
Form a log 1 1/2 cm thick and cut into 2 cm pieces
Cook small portions of gnocchi at a time in boiling salted water
Remove from pot with slotted spoon, place on warmed plate and serve with melted butter and grated Parmesan cheese, to taste
Serve 4 portions.
