Sear the chicken well-seasoned with salt, pepper, onion, garlic, tomatoes, fresh herbs, laurel, and white wine
Let it brown well and add liquid gradually, to cook thoroughly
Let it cool and shred the chicken, separating bones and skin
In a bowl, mix together mayonnaise, chicken, orange juice, and grated rind
Check the seasoning
Slice the oranges in half, remove a thin slice from each end so they fit well on the plate
Remove the pulp, leaving the white rind clean
Fill with the chicken mixture and decorate with orange slices and chicken strips
Refrigerate before serving
