In a large frying pan, cook the bacon until crispy
Leave 2 tablespoons of grease in the pan and discard the rest
Wipe out the pan with paper towels and break up the cooked bacon
Set aside
In a bowl, mix together the potato, onion, green bell pepper, and salt to taste
Pour into the frying pan
Cook over low heat for about 20 minutes or until the mixture is crispy and golden brown on the bottom
In another bowl, whisk together the eggs, milk, salt, black pepper, cooked bacon, and shredded cheese
Pour over the potato mixture in the frying pan
Cover and cook over low heat for 8 to 10 minutes
Release the edges and cut into wedges to serve
