1 bunch of spinach
5 tablespoons (of a hand) of butter
1/2 cup grated Parmesan cheese

1/2 cup grated Parmesan cheese
Cook the spinach
Drain well and chop
Mix 1/3 of the spinach with the omelette mixture
Melt the butter and prepare the omelette as usual
Mix 1/4 cup of grated Parmesan cheese with the remaining spinach
Spread a little over the omelette before folding it; place the rest around the omelette on the tray and sprinkle with Parmesan cheese
Serve in quarters.
