Slice the potatoes into thin strips
Finely chop the onion
Cut the ham into small pieces
Heat the olive oil well and fry the ham until lightly golden, then add the onion
When the onions are golden, add the potatoes
Once the potatoes are cooked, let them cool for a few minutes before adding the beaten eggs mixed with a pinch of salt
Fry gently stirring with a spatula until set
Let it slide onto a plate
Serve in one portion.
