3 tablespoons of butter
1/2 cup grated carrot
1 small onion, finely chopped
1/2 stalk of celery with leaves finely chopped
1/2 teaspoon chopped parsley
Salt and pepper to taste
3 tablespoons tomato extract
1/2 cup white wine
1/2 cup water
1 tablespoon brandy
1 cup cooked and diced shrimp
Basic omelette recipe (with 3 eggs)

Basic omelette recipe (with 3 eggs)
In a pan, melt the butter, add the carrot, onion, celery, and parsley
Season to taste with salt and pepper
Let it cook for about 8 minutes over low heat
Add the tomato extract, wine, water, and brandy
Cover and let it simmer for about 15 minutes
Add the shrimp
Prepare the omelette, spread some of the sauce on it, fold it in half, and serve the remaining sauce on top
Make 2 omelettes for 4 people.
