3 eggs (3 whites and 2 yolks)
1 cup of cooked spinach, finely chopped
1 tablespoon of finely chopped onion
1 tablespoon of fresh Minas cheese
1 tablespoon of cornstarch
1/2 tablespoon of light margarine
3 tablespoons of skimmed milk
1/2 teaspoon of salt

Beat the whites until they start to form a meringue, then add the yolks and mix well
Add the remaining ingredients and stir well
In a non-stick skillet, melt the butter and pour in the omelette mixture
Cook both sides thoroughly and serve immediately.
