Break the matzos into pieces and place them on a strainer
Pour boiling water over the top and let it drain
The matzos should not be soggy
Beat the eggs and mix in the matzo pieces
If salty, season with salt and pepper; if sweet, with sugar and cinnamon
Heat oil in a skillet and add the omelet from both sides
If sweet, sprinkle with sugar and cinnamon when serving
