In a saucepan, place the sugar and bring to caramelization over low heat
Add the milk gradually, stirring constantly until the sugar dissolves
Add the eggs and let it simmer without stirring
When they are firm, stir gently to break them up
Remove from heat and add vanilla essence
Serve chilled
