1 cup of sugar

8 slightly beaten eggs
1 tablespoon of vanilla

Place the sugar in a saucepan and bring to medium heat
Stir occasionally until caramelized
Add the water, slowly, around the edges of the pan, stirring well to dissolve the sugar and form a thin syrup
Let it simmer for 3 minutes
Add the eggs and don't stir until they are cooked through
Mix and cook for an additional 3 minutes or until the eggs are set and coated in the syrup
Add the vanilla
Remove from heat and serve cold
Portion into 8 servings
Note: The caramelization point is identified when the syrup thickens and turns golden.
