In a large, deep bowl, whisk the eggs until they're well-beaten
Add the heavy cream and mix until smooth
Season with salt and black pepper (remember that the smoked salmon is already salty!)

In a large non-stick skillet, melt the butter over medium heat
Add the roasted garlic and cook for 5 minutes or until it's softened
Add the egg mixture and cook without stirring for three minutes or until the eggs start to set
Gently stir the eggs, add the smoked salmon, and mix until combined
Cook for an additional two minutes or until the eggs are cooked through but still creamy
Serve immediately or keep warm.
